Couples choose these places for the history, and the venues protect that history with rules. Our job is to run a polished bar that fits inside those rules from the first pour to the last glass collected.

Working Inside Historic Venue Rules
Historic properties in St. Augustine often limit where a bar can stand, what can touch the floors and walls, and how late alcohol may be served. Some ask that glassware stay off certain lawns or that ice be carried in sealed coolers rather than dumped near plantings. We ask for your venue's event policy early and plan the bar footprint around it, so there are no surprises on the day.
We bring mats and liners for the bar station, keep spills contained, and leave the space the way we found it. When a venue coordinator walks the room after the last song, we want them to see an empty, clean bar area.
BYO Venue Rules and Preferred Vendor Lists
Many St. Augustine venues allow couples to bring their own alcohol but require that it be served by a professional bartender or caterer, and some only allow vendors from a preferred list. Florida does not issue state bartender licenses, so venues typically meet that requirement with certified, insured professionals. Always confirm with your venue what they accept.
If your venue keeps a preferred vendor list, ask for the current version before you book anyone. If we're not on it, we're happy to send the venue our certificate of insurance and TIPS certification so they can review us. We never claim a venue relationship we don't have.
The Champagne Toast
The toast is one of the few moments when every guest is holding a drink at the same time, so timing matters. We pre-pour flutes about ten minutes before toasts, set them on trays, and pass them as the speeches begin. Plan on one bottle of sparkling wine for every six to eight guests; you purchase it and we chill, open, and pour it.
If your couple prefers a non-alcoholic toast for some guests, we'll set aside sparkling cider or another zero-proof option so nobody is left out.
Coordinating With Your Planner
- One timeline. We work from your planner's run-of-show and confirm bar open, toast, last call, and close times in writing.
- Delivery and storage. We confirm when and where your alcohol will be dropped off and where it can be stored and kept cold.
- Day-of contact. Your lead bartender checks in with the planner on arrival and handles bar questions so the couple doesn't have to.
- Insurance paperwork. We send a certificate of insurance naming the venue within 24 hours of booking.
Peak Season Planning
Spring and fall weekends fill up quickly in St. Augustine, and some venues reserve those dates for their own packages. Book your bar team as soon as your venue date is confirmed, and give us your guest count so we can recommend staffing: usually one bartender per 50 to 75 guests for a full bar, with a barback above 125 guests.
